Oven Roasted Chicken

Who is ready for some winter cooking? I sure am guys and I want to bring you into my kitchen and cook with me. So lets turn up the ovens and get ready to COOK! Oh and of course the kids can help, I mean come on what mom doesn't love a helping hand. 

Today we are going to be cooking one of my all time favorite dishes that I have been making my family and they love it.  This dish brings me back to the days that my mom cooked for us when we were little. I added my own twist to it, so lets get started . Grab those aprons girls and guys, you might want to use some gloves too because we will be prepping some chicken.


Oven Roasted Chicken  

Prep time: 10 minutes

Total time: 1hr 10 minutes



• 6-8 Chicken Thighs  

• 2 tsp Paprika

• 2 Tbsp fresh Rosemary leaves  

• 2 tsp Granulated Garlic

• 2 tsp Granulated Onion

• 2 tsp Dijon Mustard

• 1/3 cup olive oil

•  3 tsp lemon juice  

• 10 unpeeled Garlics  

• 1 1/2 lbs baby potatoes halved  

• additional olive oil  


1) In a bowl whisk together the paprika, granulated onion, garlic, mustard, olive oil, lemon juice, salt and pepper. Once your marinade is combined add the chicken, garlic cloves and make sure it's well coated. 
2) Cover and marinate for a few hours. Allow the chicken to rest in room temperature for about 10 minutes. Meanwhile toss the potatoes with some olive oil (about 2 Tbsp) rosemary, salt and pepper.  
3) Preheat your oven to 425 degrees, place the chicken and all marinade in a large baking dish and surround with the potatoes. 
4) Roast for 1 hour or until the chicken is fully cooked through and the potatoes are golden brown. And that’s all ENJOY!!!

Rosemary is one of the most aromatic and pungent of all the herbs.
